Spaghetti Aglio e Olio
Elegant, simple, and ready before the candles burn down. The Italian answer to "what's for dinner" when you want to impress without trying too hard.

Spaghetti200g
Garlic cloves, thinly sliced6 cloves
Extra virgin olive oil⅓ cup
Red chili flakes½ tsp
Fresh flat-leaf parsley, chopped¼ cup
Parmesan, finely gratedto serve
Salt + black pepperto taste

NowCook spaghetti in generously salted boiling water until al dente. Reserve 1 cup of pasta water before draining.

While pasta cooks, warm olive oil in a large pan over medium-low heat. Add garlic and chili flakes. Cook gently 4–5 minutes until garlic is golden — not brown.

Add drained pasta to the pan. Toss well, adding pasta water a splash at a time until a light silky sauce forms.

Remove from heat. Add parsley, toss again. Season generously with salt and black pepper.

Divide between two warm bowls. Finish with parmesan and a drizzle of your best olive oil. Serve immediately.
