French Onion Soup

Yellow onions, thinly sliced4 large
Unsalted butter3 tbsp
Olive oil1 tbsp
Dry white wine½ cup
Beef broth4 cups
Fresh thyme3 sprigs
Baguette slices, toasted8 slices
Gruyère, grated2 cups

NowMelt butter with olive oil in a heavy pot over medium-low heat. Add onions and a pinch of salt. Cook slowly, stirring occasionally, for 30–35 minutes until deep golden and caramelised.

Add white wine and scrape up any browned bits from the bottom. Simmer 3 minutes until mostly evaporated.

Add beef broth and thyme. Bring to a simmer and cook 10 minutes. Season with salt and pepper. Remove thyme.

Ladle soup into oven-safe bowls. Top each with 2 baguette slices and a generous handful of Gruyère.

Broil on high for 2–3 minutes until cheese is bubbling and golden. Serve immediately — carefully, bowls are hot.
