Coconut milk1 can · 400ml
Crushed tomatoes1 can · 400g
Garlic cloves, minced2 cloves
Fresh ginger, grated1 tbsp
Red curry paste1 tbsp
Olive oil1 tsp
Brown sugar1 tsp
Cilantro + chili flakesto serve

NowHeat olive oil in a saucepan over medium heat. Add garlic and ginger, stir 1 minute until fragrant.

Stir in red curry paste and cook another minute, letting it toast in the oil.

Pour in crushed tomatoes and stir to combine. Simmer 5 minutes.

Add coconut milk and brown sugar. Stir well and simmer 10 minutes until slightly thickened.

Season with salt, ladle into bowls, top with cilantro and chili flakes. Serve immediately.
